I found this recipe randomly one day when searching for a simple brunch idea for the weekend. I love this because it’s so easy to make but looks very impressive, perfect for when you want to make a good impression! I am new to cooking so I like meals that are super easy with a short ingredient list, this is definitely on my keeper list.
What you’ll need:
Challah, Eggs, Milk, Cream Cheese, Raspberry Jam, Blueberries, Lemon Zest.
What to do:
-Mix 1/2 pack of softened cream cheese, a couple blueberries (about a quarter cup), a few tablespoons of raspberry jam (about 3-4 tbs depending on how sweet you would like the filling to be)
-Cut challah into medium slices and cut a pocket into the bottom of each slice for the filling. Be careful not to cut through the top of the slice.
-Pipe filling into the pocket you’ve cut into the bottom of each slice of challah. I don’t have a piping tool so I used a sandwich bag. Spoon mixture into the sandwich bag cut of one of the bottom tips of the bag and squeeze the mixture through the hole into the pocket, its super easy and just as good as a piping tool for this.
-Whisk together Eggs and Milk. It’ll take about 1 egg and a splash of milk to coat each piece.
-Fry your stuffed slice in a pan with some butter until golden brown.
-Remove french toast from pan, add a spoon of raspberry jam, some fresh blueberries and a bit of lemon zest on top. The lemon zest provides a refreshing balance to the cream cheese.
-Drizzle with maple syrup (optional).
You can use store bought jam but I decided to make my own homemade raspberry jam with fresh raspberries. It’ s much easier than you think and no preservatives! I’ll explain how I made it in a future post
